Resumen
Andean cane and sugar mill reflected economic prosperity and sociocultural control. The objective of the article is to reflect on the geographical and literary representations that described the importance of panela haciendas in the Northeastern Andes and the supply of panela as a popular food. The theory corresponds to cultural history based on the analysis of representations and imaginaries about the landscape associated with sugar cane and the sociocultural relations between landowners and sugar cane workers. In accordance with a qualitative approach study, mediated by documentary and content analysis, a typology is proposed on the landscapes of cane growing and the role of horror stories for the social control of workers.
